Salsify Mammoth Sandwich Island
Salsify Mammoth Sandwich Island is also known as the vegetable oyster. Not something you see in the Woolworths vegetable aisle.
It has a very distinctive and sweetish mild flavour, totally different from any other vegetable and often said to be similar to oysters.
Grows as a very long white tapering root similar to long white parsnips. The flesh is sweet and tender and the roots keep well in the ground all winter long.
Sow – October to March (cool climate).
Spacing – 10cm. rows 40cm
